The Dukunde Kawa cooperative, established in 2003, is nestled in the Northern Province of Rwanda near the village of Musasa. This region is characterised by fertile volcanic soil and a cool climate, creating an ideal environment for growing coffee. The cooperative has also developed social programmes to help grower families pay for their children's school fees and medical expenses.
Variety
The red Bourbon variety, with its unique aromatic profile, is a preferred choice for coffee lovers looking for an exceptional taste experience. This variety is known for its sweetness and refined notes. The grains are carefully selected for their maturity and density, ensuring a constant quality.
Process
Anaerobic natural coffee is produced by an oxygen-free fermentation method. The undepulped coffee cherries are placed in airtight tanks, where fermentation takes place in the absence of air. This process promotes the action of yeasts and bacteria that transform the sugars and acids in the mucilage into unique aromatic compounds. The anaerobic fermentation intensifies the coffee’s flavours, giving it a richer, corpulent profile with distinct fruity notes.
Roasting
For this Bourbon rouge, Daniela Capuano, our MOF roaster, has opted for a moderate roast to reveal its roundness and velvety texture, while preserving its fruity, slightly acidic characteristics.
To guarantee exemplary freshness, our coffees are roasted to order in an artisanal workshop in Bordeaux, which is certified organic.
