The red Bourbon variety, with its unique aromatic profile, is a preferred choice for coffee lovers looking for an exceptional taste experience. This variety is known for its sweetness and refined notes. The grains are carefully selected for their maturity and density, ensuring a constant quality.
Process
Anaerobic natural coffee is produced by an oxygen-free fermentation method. The undepulped coffee cherries are placed in airtight tanks, where fermentation takes place in the absence of air. This process promotes the action of yeasts and bacteria that transform the sugars and acids in the mucilage into unique aromatic compounds. The anaerobic fermentation intensifies the coffee’s flavours, giving it a richer, corpulent profile with distinct fruity notes.
Roasting
To ensure that this decaffeinated coffee retains all the properties of a silky, floral and fruity Heirloom, Daniela Capuano, our MOF roaster, has opted for a balanced roasting.
To guarantee you an exemplary freshness, our coffees are roasted on order in a workshop in Bordeaux that has organic certification.

A superb caffeine-free coffee thanks to an exceptional variety and an organic " Swiss water " decaffeination method. Sourced from a micro-lot in the Sidama region, this coffee is cultivated by the legendary track and field champion, Haile Gebrselassie , now dedicated to organic coffee farming. The natural decaffeination process is certified organic and preserves the fruity and white floral notes.
