Origin
Le café Sudan Rume, peu productif et relativement difficile à cultiver, est rarement produit seul. La ferme Granja La Esperanza (GLE), située dans la vallée de Cauca en Colombie, est l'un des rares producteurs à proposer ce type de café, et nous sommes ravis de l'ajouter à notre carte. La mission de Granja La Esperanza est de repousser les limites de la production des meilleurs cafés au monde grâce à l'expérimentation et à l'innovation dans le traitement post-récolte et la culture de variétés uniques et rares. Cette exploitation a acquis une renommée internationale pour la culture de certains des meilleurs cafés.
Variety
Your custom coffee will be made up of two varieties:
- Sudan Rume, an extremely rare Arabica variety, highly sought after by coffee lovers. Particularly resistant to diseases, this variety has often been used for hybridization. It gives a cup with intense, complex, singular aromas, with a mix of tropical fruit notes.
- Nganda, a variety of intense Coffea Canephora, whose spicy and woody notes will balance the assemblage.
Process
The "Nature" process consists of drying the whole fruit - the coffee cherry - leaving the beans in contact with the pulp and skin. After harvest, cherries are placed on large raised beds where they dry in the open air for about three weeks. Once the drying is finished, the bean is separated from the fruit in a delicate and manual way.
This slow fermentation gives the coffee a remarkable aromatic intensity. Known as the dry process, this method is an environmentally friendly and sustainable choice because it requires very little water compared to washed processing methods.
Roasting
Compte tenu du caractère très exclusif de ce café, Daniela Capuano, notre torréfactrice MOF, a opté pour une torréfaction modérée, afin de révéler sa texture satinée et vibrante tout en préservant ses caractéristiques fruitées et légèrement épicés.
Afin de vous garantir une fraîcheur exemplaire, nos cafés sont torréfiés à la commande, dans un atelier artisanal à Bordeaux qui bénéficie d’une certification biologique.

Grown on the Bahati Blue Coffee Estate, perched at an altitude of over 2,000 meters in the Nakuru region, this coffee combines the Batian and Ruiru 11 varieties.
Planted in 2012, the farm is renowned for its high agronomic standards and meticulous expertise: each cherry is harvested at perfect ripeness, then processed using the washed method, revealing the purity of the bean.
In the cup, Bahati Blue offers assertive clarity, lively and controlled acidity, and a clean and elegant finish.
