Origin
In the original cradle of coffee, which is suffering from a serious humanitarian crisis, we can only welcome the project of Qima Coffee, which for five years has aimed to reintroduce a tradition of excellence in Yemen.
Qima’s demanding approach has required significant research to study the genetics of coffee and reclassify the different varieties. Qima now works with 2,600 farmers, and is responsible and authentic.
The micro-lot we selected grows at 2,300 metres in the Sana'a region. It is produced in organic farming with ancestral techniques, which allow to revive the aromas of coffee.
Variety
Yemenia is a mother variety from the Yemeni soil. Coffee was first grown on these arid soils almost 600 years ago, from beans from the lush highlands of Ethiopia.
Yemen played a major role in the genetic codes of Arabica, since 98% of Arabica coffees can be traced there.
While many producing countries can be associated with an aromatic characteristic, it is difficult to characterize a specific aroma of Yemen, as the climatic and genetic diversity is important. It is often said that the aromas of Yemeni coffees have a palette as wide as the 800 aromatic compounds in the wheel of flavors.
The micro-lot edited by MOMUS has aromas of spices and flowers.
Process
The "Nature" process consists of drying the whole fruit - the coffee cherry - leaving the beans in contact with the pulp and skin. After harvest, cherries are placed on large raised beds where they dry in the open air for about three weeks. Once the drying is finished, the bean is separated from the fruit in a delicate and manual way.
This slow fermentation gives the coffee a remarkable aromatic intensity. Known as the dry process, this method is an environmentally friendly and sustainable choice because it requires very little water compared to washed processing methods.
Roasting
To reveal the wild side of this coffee while keeping these spicy notes, Daniela Capuano, our MOF roaster, has opted for a slightly advanced roasting that gives it a caramelized sweetness.
To guarantee you an exemplary freshness, our coffees are roasted on order in a workshop in Bordeaux that has organic certification.
