This coffee comes from the mountains of Caparaó, in Brazil, a region renowned for its exceptional terroir, located at an ideal altitude for coffee cultivation. Thanks to a unique climate, the farms in this region produce high quality coffees, combining traditional and sustainable methods. The natural process of sun-drying coffee cherries preserves complex aromas while respecting the environment, ensuring a rich and balanced cup, characteristic of the Caparaó region.
Variety
Red Catuaí is a variety of arabica coffee born from a cross between Mundo Novo and Caturra, developed in Brazil in the 1970s. Appreciated for its resistance to harsh climatic conditions, it produces grains with delicate and sweet aromas. Red Catuaí stands out for its notes of caramel, tropical fruits and sweet acidity, making a coffee with a rich and complex profile, appreciated by lovers of specialty coffees.
Process
The "Nature" process consists of drying the whole fruit - the coffee cherry - leaving the beans in contact with the pulp and skin. After harvest, cherries are placed on large raised beds where they dry in the open air for about three weeks. Once the drying is finished, the bean is separated from the fruit in a delicate and manual way.
This slow fermentation gives the coffee a remarkable aromatic intensity. Known as the dry process, this method is an environmentally friendly and sustainable choice because it requires very little water compared to washed processing methods.
Roasting
For this Brazilian Red Catuaí, Daniela Capuano, our MOF roaster, opted for a gentle and slow roasting process to reveal its subtle characteristics, its slightly sweet roundness and velvety texture.
To guarantee you an exemplary freshness, our coffees are roasted on order in a workshop in Bordeaux that has organic certification.
