It is an honor to edit the coffee of one who is undoubtedly the greatest runner in the history of athletics: Haile Gebreselassie. Double Olympic champion, 6 times gold medalist at the world championships, he is now a producer of natural and organic coffees recognized and committed.
His farm in Yeppo, 1,800 metres above sea level in the Sidama region, is a model of sustainable development and support for neighbouring farming communities. Two hundred hectares are dedicated solely to forest conservation, in accordance with the standards of the Organic and Rainforest Alliance. The cultivated land is divided into 46 micro-lots where each variety can be traced.
Variety
This Masha is a variety of Heirloom, generic term that refers to the endemic varieties of Ethiopian coffees. This variety is found in the wild tropical primary forests of the southwest and east Rift, the historic cradle of humanity but also of coffee. Each region of Ethiopia has its own types of Heirloom, we now count 150, which offer a very wide range of aromatic profiles.
This Heirloom Masha from Yeppo Village is a natural Arabica, which results from organic farming. Its balanced structure, around notes of fruits and white flowers, makes it an ideal base for a decaf that retains all the properties of a great coffee.
Process
The "Nature" process consists of drying the whole fruit - the coffee cherry - leaving the beans in contact with the pulp and skin. After harvest, cherries are placed on large raised beds where they dry in the open air for about three weeks. Once the drying is finished, the bean is separated from the fruit in a delicate and manual way.
This slow fermentation gives the coffee a remarkable aromatic intensity. Known as the dry process, this method is an environmentally friendly and sustainable choice because it requires very little water compared to washed processing methods.
Roasting
To ensure that this decaffeinated coffee retains all the properties of a silky, floral and fruity Heirloom, Daniela Capuano, our MOF roaster, has opted for a balanced roasting.
To guarantee you an exemplary freshness, our coffees are roasted on order in a workshop in Bordeaux that has organic certification.
