An exceptional Cascara is necessarily from an exceptional plantation: the one published by MOMUS comes from Panama, from the Finca Hartmann, a family business located in Santa Clara, in the district of Renacimiento.
Founded in 1950 by Ratibor Hartmann, the region’s first farmer, it is now run by his son who, true to his father’s passion, continues to develop agroforestry farming where coffee grows in the shade of tropical forest trees. The farm consists of two farms located between 1,300 and 2,000 metres above sea level, including 100 hectares of forest reserves bordering La Amistad National Park.
Variety
Our Cascara is the fruit of 2 Brazilian varieties, the Caturra and the Catuai.
Discovered in 1937, the Caturra is a natural mutation of Bourbon. This very sensitive variety requires great care during its ripening phase. It is at high altitude that it best expresses its aromatic complexity.
Catuai, from the cross between Catura and Mundo Novo is a more resistant plant that was developed in the 1940s in Brazil. Its fruits, well attached to the branches, are suitable for windy and rainy climates.
Recipe
We advise you to prepare your Cascara in a French press (or coffee machine).
Start by rinsing your Cascara thoroughly with cold water.
For a hot brew, prepare:
- 10 gr of Cascara
- 300 ml of hot water
Let steep for 5 to 7 minutes.
For cold brew, prepare:
- 20 gr of Cascara
- 300 ml of hot water
Let steep for 10 minutes.
Serve in a large glass with ice cubes.

Consumed since the 8th century in the Arabian Peninsula, Cascara is the dried pulp of the coffee cherry. This dried fruit is enjoyed as an infusion, hot or cold, offering delicate aromas of red fruits, prunes and hibiscus. Appreciated by both tea and coffee lovers, it is gourmet, comforting and slightly caffeinated. In addition to its taste qualities, Cascara is known for its antioxidant and draining properties.
