This coffee is grown in the Pichincha region of Ecuador, on the Las Tolas farm near Quito. The region has a unique microclimate and volcanic soils, making it an exceptional terroir for the production of high altitude coffees.
Producer Arnaud Causse, a pioneer in sustainable farming practices, manages the farm with an environmentally friendly approach, integrating agroforestry techniques and preserving local biodiversity. This allows the production of coffee with a great aromatic richness, while protecting the ecosystem.
Variety
The Java variety is used for this coffee. This variety is known for its complex aromas and cup sweetness. In cup, this coffee offers a balanced profile, with fresh and fruity aromas, typical of the best coffees in the region of Pichincha.
Process
The washed process, also known as wet method, is one of the most common coffee processing processes. After harvesting, coffee cherries are pulped to remove pulp before being placed in fermentation vats. This step removes the mucilage surrounding the grains through the action of natural enzymes. The grains are then washed with water to remove any remaining residue, and then sun dried or mechanically dried. This process produces coffee with a crisp, more acidic and precise flavour, revealing the intrinsic characteristics of the terroir and variety.
Roasting
To reveal the breadth of this Java’s fruity and spicy aromatic palette, Daniela Capuano, our MOF roaster, has opted for a light roasting ideal for tasting in gentle methods.
To guarantee you an exemplary freshness, our coffees are roasted on order in a workshop in Bordeaux that has organic certification.
