Origin
The Café Rivense farm is a family-owned micro-mill, founded in 2005 by Regulo Ureña and Isabel Rojas. The four sons - Ricardo, Mario, Esteban and Luis - are heavily involved in the management of the farm. It is located in the central-southern part of Costa Rica, in a micro-region called Chirripó. It is not far from the capital, San José, but the winding path through the mountain range can be a serious challenge for many foreigners.
Variety
At the intersection of the very productive Mundo Novo and the very dense Caturra, Catuaí is characterized by its great vigor even if it is very sensitive to coffee rust. Catuaí is derived from the Guarani muito bom, which means very good. The variety was introduced in Brazil in 1972 after genealogical selection, and then in Costa Rica in 1985.
Process
The "Honey" drying process, born in Costa Rica, is characterized by its low environmental impact thanks to a minimal use of water. After a manual harvest of coffee cherries, they are depulped and then put to air-dry on raised beds. The process alternates between air drying phases, anaerobic periods and protection from light for 8 days, allowing slow fermentation. Once the ideal moisture content is reached, between 10 and 12%, the beans are subjected to de-plating, which consists of removing the last shell around the beans.
In a cup, the coffees from the Honey process offer a generous body and pronounced sweetness.
Roasting
To enhance the tropical notes of this Gold Catuaí and keep a round and satin texture, Daniela Capuano, our MOF roaster, has opted for a balanced roasting.
To guarantee you an exemplary freshness, our coffees are roasted on order in a workshop in Bordeaux that has organic certification.
