For this blend, Daniela Capuano has brought together 3 exceptional Arabica varieties. The accuracy of the proportions sublimates each of their characteristics, resulting in a balanced, complex and sunny cup like his Brazilian childhood:
- The Red Catuaì from the family farm Sitio Canaa, located in the region of Caconde, for its caramel and praline notes.
- The Castillo offers a balanced coffee with fruity and chocolate notes, while maintaining a beautiful acidity, typical of high altitude Colombian coffees.
- The natural heirloom of the Yrgacheffe region in Ethiopia. From the organic farming of the Chelchelle farm, this round and light variety that grows at 2,000 meters brings its floral notes to its assemblage.
Roasting
Each of the varieties that make up Saudade is roasted separately to respect its organoleptic profile and enhance its aromatic potential. It is only after the roasting that the assemblage is composed. For Saudade, each roast is designed to obtain a composition with a gourmand and balanced character.
To guarantee you an exemplary freshness, the blend is roasted at the order in our artisanal workshop in Bordeaux which has organic certification.
Creator
The daughter of Brazilian coffee producers from Minas Gerais, Daniela grew up among the coffee trees on her family’s farm.
After studying design, it is quite naturally that the passion for coffee wins and she makes her first weapons as a barista in Belo Horizonte. Her desire to travel led her to France, where she won the 2019 Meilleur Ouvrier de France Torréfaction competition, of which she is still the only woman to hold the title. Considered by her peers as the reference coffee expert, Daniela signs with Saudade and Outrenoir two exceptional blends.

"It was while thinking about my Brazilian childhood, spent on my grandmother's coffee plantations, that I designed this floral blend, which I wanted to be soft, silky and sunny. With Saudade, I created my Madeleine de Proust, hoping that this blend would have the flavor of a happy nostalgia. A harmonious and delicate coffee, for a balanced espresso, without bitterness."
