Process
This blend is composed of two natural varieties, whose processing process consists in drying the whole fruit - the coffee cherry - leaving the beans in contact with the pulp and skin. Right after harvest, the cherries are placed on large raised beds, where they remain outdoors for three weeks.
Only when dried, an expert hand separates the bean from the fruit. This slow fermentation gives the coffee an incomparable aromatic intensity. Also known as the dry route, this natural method is an environmentally friendly and responsible choice because it requires very little water consumption, unlike washed methods.
Roasting
For our Christmas coffee, Daniela Capuano, our MOF roaster, opted for a moderate roasting, to reveal its roundness and satin texture while preserving its chocolate and slightly tart characteristics.
To guarantee you an exemplary freshness, our coffees are roasted on order in a workshop in Bordeaux that has organic certification.
